Question
The more commonly used baking powder contains about 30% NaHCO3, 20% NaAl(SO4)2 10% Ca(H2PO4)2 and 40% starch. Which of the following statement(s) is/are correct ?
Options
A.Ca(H2PO4)2 is acidic when moistened it reacts with NaHCO3 evolving CO2 gas.
B.NaAl(SO4)2 slows down the decomposition reaction of NaHCO3 so that CO2 is evolved more slowly.
C.Starch functions as filler.
D.NaAl(SO4)2 and starch both acts as filler.
Solution
Ca(H2PO4)2 is acidic in aqueous solution which liberates CO2 on reaction with NaHCO3. NaAl(SO1)2 acts as retarder so that CO2 is given off more slowly. Only starch acts as filler. (increases the bulk density).
